preservation:

Preserving Brinjal requires first blanching and then freezing. Blanching is a process of heating foods rapidly to deactivate surface enzymes that contribute to the changing of color and flavor. By blanching eggplant prior to freezing, you will be left with a higher quality product when thawed. This method can be used to preserve any number of eggplants, and will provide a storage time of up to one year in the freezer.
